Healthy Japanese Cookery

Sachiko Saeki

Healthy Japanese Cookery

I am delighted to say that Sachiko Saeki will be demonstrating at Mayfield House in November. Sachiko’s parents ran a restaurant in Japan which formed a focal part of her upbringing with Japanese food being central to her life. She was featured in Hugh Fearnely-Whittingstall’s River Cottage Veg Heroes as she grows Japanese vegetables in England and in recent years has developed her craft in the London kitchens of Wabi in Holborn, Mitsukoshi in Piccadilly and as an assistant to the Head Chef at Umu, a Michelin starred Japanese restaurant in Mayfair. Sachiko continues to teach Japanese cooking at Leiths and at cookery schools in Bath and Birmingham. Her demonstration will focus on key Japanese ingredients and seasonings using traditional tools with key techniques including traditional ways of eating, stock making, marinating and unami as well as knife sharpening and maintenance of knives. A morning not to be missed!

The day starts at 11am with Coffee and the Demo will start promptly at 11:30am until 13:30
