  1. Put the caramel into a large bowl and stir to loosen slightly.
  2. Add double cream and salt and whisk until the mixture is thick and billowing
  3. Scoop into an airtight container and freeze overnight.
  4. Serve with a few flakes of sea salt sprinkled over.

TOP TIPS

This ice cream is ridiculously easy and goes beautifully with the Apple & Almond Pudding Cake. Also it is indispensable for having to hand when you need a quick pudding and it goes well with mince pies, left over Christmas pudding or just by itself when you don't have anything else. An absolute must!
