THAI NOODLE SALAD WITH PEANUT SAUCE

Instructions
  1. Cook the noodles according to directions on the packet. Drain and chill under cold running water. Set aside.
  2. While the noodles are cooking, blend all the ingredients for the peanut sauce together using a blender until smooth.
  3. Place the shredded veggies, pepper, spring onions, coriander (keeping a small amount back for the garnish) and chopped chilli into a mixing bowl. Toss together and add the noodles and toss again.
  4. Pour the peanut sauce over top and toss well to combine.
  5. Taste and season. Place on a serving platter, add chili flakes if you want and sprinkle the peanuts over the top, top with some coriander and serve a lime wedge.

TOP TIPS

Make a double batch of the peanut sauce as it lasts in the fridge and you can use for another salad or eat with chicken.

Use light soy sauce and if you use tamari it will turn the sauce very dark.

This can be vegan and gluten free if you use Tamari
