Place the feta, ricotta and yoghurt / sour cream in a food processor, add the lemon juice and salt and pepper. Blend on high until smooth about 2-3 minutes. Season to taste, set aside.
In a small saucepan heat the olive oil and add the garlic and sauté on a very low heat until soft and starting to turn golden. Take off the heat and stir in the honey, lemon juice and chilli flakes. Season and place somewhere warm.
For the onions heat 1 tbsp. of olive in a large frying pan, add the onions and soften for 10-15 minutes. Add the maple syrup, cumin seeds and pinch of chilli flakes and cook until the onions are soft, golden and caramelised around the edges.
Place the whipped feta in a swirl on a large serving plate, drizzle with hot honey and top with spiced onions. Serve with crackers or vegetables on the side of the plate for everyone to tuck into.
