
Sticky Sausage Tray Bake
Ingredients
- 2 large onions peeled, halved and cut into 4
- 4 carrots peeled and roughly chopped
- 2 large fennel roughly chopped
- 500 g new potatoes halved or cut into chunks
- 8 large pork sausages
- 2 tbsp. olive oil
- 1 tbsp. thyme leaves chopped
- 150 g marmalade
- 2 tbsp. Dijon mustard
- 1 tbsp. honey
- Salt and pepper
Instructions
- Preheat the oven to 220°C / 200°C fan / gas mark 7 / AGA roasting oven.
- Place the onions, carrots, fennel, potatoes and sausages in a large baking tray. Drizzle with 1 tbsp olive oil, season with a little salt and lots of freshly ground black pepper and toss together.
- Roast for 20 minutes, take out of the oven and turn the veggies and sausages. Return to the oven and cook for 15-20 minutes until all are starting to crisp in places and the sausages are nicely browned.
- While the sausages and vegetables are cooking, mix the remaining 1 tbsp. of olive oil with the thyme, marmalade, mustard, honey, salt and pepper.
- Take the tray out of the oven once more and drizzle over the marmalade mixture. Gently toss together and return to the oven for 10 -15 minutes until everything is sticky and golden.
- Serve immediately with a green vegetable or salad.
Notes
TOP TIPS
- Use whatever sausages you like but the cooking time is for large thick sausages. Change the veggies – you can take out the potatoes, use parsnips instead or add a green vegetable at the end e.g. tenderstem broccoli for the last 10-15 minutes.
- Even if you aren’t mad on marmalade the sweetness and stickiness are delicious and go so well with sausages, it is worth a try.
- Use your largest oven tray so you can spread everything out and it all cooks evenly.
